Hazard Analysis and Critical Control Point (HACCP) is a systematic
preventive approach to food safety and pharmaceutical safety that addresses physical, chemical, and biological hazards as a means of prevention rather than finished product inspection. It is used in the food industry to identify potential food safety hazards, so that key actions, known as Critical Control Points (CCPs) can be taken to reduce or eliminate the risk of the hazards being realized. The system is used at all stages of food production and preparation processes including
packaging, distribution, etc.

Freshly Baked Croissant
A croissant is a buttery, flaky, viennoiserie pastry named for its well-known crescent shape. Croissants and other viennoiserie are made of a layered yeast-leavened dough. The process results in a layered, flaky texture, similar to a puff pastry.
Pain Au Chocolat
Pain de chocolat chocolate bread, also known as chocolatine in the south-west part of France and in Canada (only certain parts according to Renaud), is a type of viennoiserie sweet roll consisting of a cuboid-shaped piece of yeast-leavened laminated dough, similar in texture to a puff pastry, with one or two pieces of dark chocolate in the centre.
They are twice-baked, oblong-shaped, dry, crunchy, and dipped in a drink, traditionally Vin Santo.
